Barbecue with a Twist: Honey Chipotle BBQ Chicken

If chipotles in adobo sauce is one of your favorite kitchen staples, and all things barbecue delight you, a smashing combination of will certainly lift your spirit. Adding honey to the concoction balances out the slow burn of the chipotles. The sweet, smoky taste that you are familiar with, can transform your daily meat dishes in minutes. Moreover, you can always crank up the traditional chipotle barbecue chicken several notches with just a drizzle of whisky.


  • ½ diced onion
  • 4 smashed garlic cloves
  • 2 tsp oil
  • 2tsp butter
  • ¼ cup tomato paste
  • 1/3 bourbon or corn whisky
  • 1 cup ketchup
  • 1 can chipotle peppers in Adobo sauce (2 peppers, 3 tsp adobo sauce)
  • 3 tsp Worcestershire
  • 2 tsp balsamic
  • ½ cup honey
  • 3 tsp molasses
  • 1 tsp soy sauce
  • ½ cup water
  • 12 pieces of skin-on bone-in chicken
  • Cracked pepper

The Process

Take a medium sized pot, put it on medium high heat and sauté the diced onions and smashed garlic cloves in butter and oil until they are tender. Adding the tomato paste in the mix, stir fry it for about 2 minutes. Deglaze it with whisky, letting the pot simmer for 1 minute. Add all the remaining ingredients and slow cook for 10 minutes. Keep it aside.

Clean the chicken, and rub them with a very small amount of oil, kosher salt and freshly ground pepper. Evenly grill both sides without burning them, for 5 to 10 minutes.

In a sauté pan, baste the chicken with the honey chipotle barbecue sauce, and cook for 20 to 25 minutes, until the juices run clear. Heat up the grill and give the chicken one last hot sear to make the skin crispier.

It is also a good idea to add a teaspoon of soy sauce to your barbecue chicken to give it more depth, before serving.
